450 Calorie Lunch Week – Day 3
If you’re like me, you’ve found yourself obsessing over this workweek lunch challenge. I’ve spent a lot of time thinking about what I’ll be eating for lunch and calculating to make sure it meets the calorie limit. I’m not the only person like that, am I?
For today, the base of my workweek lunch is a left over meal from the weekend. A rich, smoky, spicy black bean soup I’m trying to perfect. It is actually half a recipe, a sauce made to garnish egg enchiladas, but I found it so good by itself, I *knew* it would make a great soup base.
Still working on the recipe, but when I get it just right, I’ll make sure to post it here.
I also added a grilled cheese sandwich with *gasp* real butter. (Sorry. Nothing replaces the taste of real butter on the outside of a grilled cheese sandwich.) Don’t worry though! I only use a teaspoon for the whole sandwich. The crispy grilled outside? Courtesy of fat-free butter spray.
To finish off the lunch, I stole an itty-bitty mandarin from my daughter’s stash. She won’t miss it.
Total lunch calories = 408.
Another successful workweek lunch, if I can say so myself.
