450 Calorie Lunch Week – Day 4

While I’m running low on kitchen supplies (honestly have never seen the fridge so bare), I’m still working on the 450 Calorie Lunch Challenge from LoseIt. Today, I was down to greek yogurt, so I decided to make the girl and me smoothies!

I’m really loving smoothies this summer. I guess part of the reason is I can throw spinach in them and not even taste it. (My husband begs to differ.)

I love this, because we always buy 2-4 bags of pre-packaged salad and spinach which always seem to wilt too quickly. (When I buy less, we always end up needing more!)

Since I hate throwing away food – it’s like I’m throwing money away – I throw the spinach in a smoothie to get blended down, instead of the trash! Money spent and used well.

The other reason I love smoothies so much is because I can use up my bananas before they completely spoil. Once they start turning brown and soft, I just peel them and stick them in a Ziploc bag in the freezer. They usually make the base of one of my smoothies, so it’s just as simple as pulling one out to slice and add to the blender.

Today’s smoothie? Pineapple Banana Coconut! So yum!

Pineapple Banana Coconut Smoothie

Ingredients
  • 1 banana, frozen and sliced
  • ½ cup pineapple chunks with juice
  • ½ cup water
  • ½ Tbsp chia seeds
  • 1 cup vanilla greek yogurt
  • 1 Tbsp coconut butter
  • 1½ cup spinach leaves
  • 1 cup ice

Instructions
  1. Layer the ingredients in your blender in the order listed above. (Helps them blend easier.)
  2. Blend!

The smoothie and half a bag of popcorn (shared with my girl), bring today’s calorie lunch total to 351 calories! Boy am I full!

And yes, she really does drink a whole serving by herself (or at least 3/4 of the serving)!
