Meals Under 300: Date & Pecan Yogurt
One of the nice things this last month was spending time with my brother. He works overseas, so I only see him once every 3 to 4 years.
He’s a bit of a health buff, eating well 95% of the time and staying fit with exercise. Being part of his daily routine, I saw that in action and watched him make a lot of healthy meals.
Just like the girl and myself, he has a thing for Greek yogurt. It made me feel good we both ate tons of yogurt. The difference was in the ingredients.
While I tend to like the single serving Greek yogurt, my brother made yogurt concoctions with the plain, non-flavored Fage Greek yogurt. Not quite sure I’m ready for a base of plain Greek yogurt, but taking a page from his book, I decided to make up my own.
- ½ cup vanilla Greek yogurt
- 1 Medjool date, sliced or diced
- 1 Tbsp chopped pecans (about 3 halves)
- sprinkle of cinnamon
- Assemble all ingredients into a cup.
- Mix and it’s ready to go!
What I love about it is I get a shot of sweetness from the date and crunch from the pecan. It’s yummy and for a surprisingly small meal, fairly filling. The best part? It’s only 210 calories! Easy to fit into a six meals a day rotation without busting your calorie budget.
